# Steps:

01 - Combine beef with soy sauce, cornstarch, and sesame oil in a bowl. Mix thoroughly to coat and marinate for 10 minutes.
02 - Prepare noodles according to package directions until al dente. Drain well and set aside.
03 - Whisk together soy sauce, oyster sauce, hoisin sauce, toasted sesame oil, brown sugar, water, and cornstarch in a small bowl until smooth.
04 - Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated beef and stir-fry for 2 to 3 minutes until browned. Remove beef from pan and set aside.
05 - In the same pan, add broccoli, carrot, and bell pepper. Stir-fry for 2 to 3 minutes until vegetables are crisp-tender. Add garlic and cook for 30 seconds until fragrant.
06 - Return beef to the pan along with cooked noodles and green onions. Pour sauce over everything and toss until evenly coated and heated through, about 2 minutes. Transfer to serving plates and sprinkle with toasted sesame seeds and extra green onions.

# Expert Tips:

01 -
  • The tender beef and crisp vegetables come together in under 30 minutes, making it perfect for busy weeknights
  • That sesame soy sauce creates this incredibly rich coating that clings to every single noodle
  • You can customize the vegetables based on whatever is sitting in your crisper drawer
02 -
  • Crowding the pan will steam the beef instead of searing it, so work in batches if your wok is on the smaller side
  • The sauce thickens fast once it hits the hot pan, so have everything ready before you pour it in
  • Lo mein noodles keep absorbing sauce as they sit, so add a splash of water when reheating leftovers
03 -
  • Prepping all your ingredients before you turn on the heat makes the actual cooking feel effortless and calm
  • Room temperature beef sears more evenly than cold straight from the refrigerator
