Cottage Cheese Loaf Bread (Print Version)

A tender loaf enriched with creamy cottage cheese, ideal for toasting, sandwiches, or breakfast.

# What You'll Need:

→ Dry Ingredients

01 - 3 cups all-purpose flour
02 - 2 tbsp granulated sugar
03 - 1½ tsp salt
04 - 2¼ tsp active dry yeast (1 packet)

→ Wet Ingredients

05 - 1 cup cottage cheese, room temperature
06 - ¼ cup warm milk
07 - 2 tbsp unsalted butter, melted
08 - 1 large egg, room temperature

# Steps:

01 - In a large mixing bowl, combine flour, sugar, salt, and yeast. Stir to mix thoroughly.
02 - In a separate bowl, whisk together cottage cheese, warm milk, melted butter, and egg until smooth and well blended.
03 - Add the wet mixture to the dry ingredients. Mix with a wooden spoon or dough hook until a sticky dough forms.
04 - Turn the dough onto a floured surface and knead for about 8 minutes, adding flour as needed, until the dough is smooth and elastic.
05 - Place the dough in a lightly greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
06 - Punch down the dough, shape into a loaf, and place in a greased 9x5 inch loaf pan. Cover and let rise for 30 minutes.
07 - Preheat oven to 350°F.
08 - Bake for 35 minutes, or until golden and the loaf sounds hollow when tapped.
09 - Remove from pan and cool on a wire rack before slicing.

# Expert Tips:

01 -
  • The cottage cheese makes every slice incredibly tender and gives you 6 grams of protein per slice without any heavy aftertaste
  • It keeps fresh for days, making it perfect for meal prep breakfasts or quick sandwich lunches
02 -
  • Room temperature cottage cheese incorporates better and prevents cold spots that could inhibit yeast activity
  • Letting the loaf cool completely before slicing prevents the inside from becoming gummy
03 -
  • For the tallest rise, let your dough rise in a slightly warm oven with just the light on
  • Brush the top with beaten egg and a sprinkle of coarse salt before baking for a bakery finish
