# Steps:

01 - Preheat oven to 400°F and line a baking sheet with parchment paper

03 - Form the mixture into 20 to 24 bite-sized meatballs and arrange on the prepared baking sheet
04 - Bake for 20 to 25 minutes, turning once halfway through, until browned and cooked through
05 - Mix mayonnaise, sriracha, lime juice, sesame oil, honey, and salt in a small bowl until smooth. Adjust sriracha to desired heat level
06 - Arrange cooked meatballs on a serving platter. Sprinkle with toasted sesame seeds and sliced green onions. Serve hot with the spicy mayo dip on the side

# Expert Tips:

01 -
  • These disappear faster than you can say gochujang, so consider doubling for actual crowds
  • The spicy mayo dip creates this creamy cooling effect that perfectly balances the heat
02 -
  • Overmixing the meat makes tough meatballs, so use your hands and work gently
  • Letting the meatballs rest for 5 minutes after baking helps them retain their juices
03 -
  • Brush the meatballs with extra gochujang mixed with a little honey during the last 5 minutes of baking
  • Use a small cookie scoop for perfectly uniform meatballs that cook evenly
